Se elabora \u00fanicamente utilizando las manos expertas del quesero, de la misma forma artesanal de anta\u00f1o..<\/p>\n\n\n\n<p>La \u00fanica diferencia entre un Parmigiano Reggiano del siglo XII y una forma actual est\u00e1 en el control de calidad que, gracias al Consorcio de Protecci\u00f3n \u2014establecido en 1928 a propuesta de los productores y de la C\u00e1mara de Comercio de Reggio Emilia\u2014 asegura el cumplimiento de estrictas normas de producci\u00f3n.<\/p>\n\n\n\n<p>Las vacas lecheras de las provincias de Parma, Reggio Emilia, M\u00f3dena, Bolonia \u2014a la izquierda del r\u00edo Reno\u2014 y Mantua \u2014a la derecha del r\u00edo Po\u2014 reciben una dieta exclusiva de forrajes provenientes de pastos seleccionados de la zona. Muy fragantes y ricos en alimentos vitales, son el primer elemento destacado que distingue la calidad de este queso.<\/p>\n\n\n\n<p>El procesamiento de la leche, como un ritual, sigue con precisi\u00f3n reglas antiguas que jam\u00e1s han sido modificadas.<\/p>\n\n\n\n<p>La leche, vertida en la caldera, se calienta a la temperatura adecuada. El queso se forma con la adici\u00f3n de suero y cuajo, dos elementos absolutamente naturales, y no se utiliza ning\u00fan otro componente. Tras desmenuzar el co\u00e1gulo en granos y cocerlo, la pasta as\u00ed obtenida, extra\u00edda de la caldera utilizando un pa\u00f1o de grandes dimensiones, se introduce en moldes cil\u00edndricos que, adem\u00e1s de un calibrado perfecto, dan al queso su primera marca de origen.<\/p>\n\n\n\n<p>La forma obtenida se coloca luego en un ba\u00f1o de agua salada donde, debido a la soluci\u00f3n salina, el queso elimina el exceso de agua y absorbe una peque\u00f1a cantidad de sal. El cloruro de sodio, la sal de mesa com\u00fan, es el \u00fanico ingrediente agregado.<\/p>\n\n\n\n<p>Tras concluir estos procesos, el queso llega a las espectaculares almacenes de maduraci\u00f3n, donde reposa hasta 24 meses.<\/p>\n\n\n\n<p>A la mitad del \u201cviaje\u201d, hacia el duod\u00e9cimo mes, los inspectores del Consorcio revisan la forma. Si re\u00fane todas las caracter\u00edsticas de idoneidad, es marcada a fuego.<\/p>\n\n\n\n<p>Mientras tanto, el Parmigiano Reggiano sigue madurando. A diferencia de otros quesos, la ausencia total de conservantes no bloquea los procesos de transformaci\u00f3n natural. Es como si la leche siguiera viviendo en otra dimensi\u00f3n, lo que permite que el Parmigiano Reggiano alcance la perfecci\u00f3n con una riqueza incomparable de sustancias, aromas y fragancias.<\/p>\n\n\n\n<p>Actualmente se presenta en ruedas de 33-35 kg, de textura dura y uniforme, con estructura finamente granulada (de ah\u00ed el nombre de \u201cgrana\u201d), de color ligeramente pajizo, con un sabor y aroma delicioso e inconfundible.<\/p>\n\n\n\n<p><strong>El Museo del Parmigiano Reggiano<\/strong><\/p>\n\n\n\n<p>Debido a la particular conformaci\u00f3n de la estructura de planta circular con una sola sala, la antigua f\u00e1brica de queso del castillo Meli-Lupi en Soragna, en la provincia de Parma, fue elegida para convertirse en la sede del Museo del Parmigiano Reggiano \u2014uno de los veinticuatro museos del gusto esparcidos por el territorio y dedicados a productos t\u00edpicos locales\u2014, inaugurado el 30 de noviembre de 2003.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full\"><a href=\"https:\/\/www.italia.it\/es\/emilia-romana\/que-hacer\/5-experiencias-gastronomicas-en-emilia-romana?utm_medium=pubbliredazionale&amp;utm_source=puntodincontro.mx&amp;utm_campaign=mx22-generic&amp;utm_term=food\" target=\"_blank\" rel=\"noreferrer noopener\"><img loading=\"lazy\" decoding=\"async\" width=\"592\" height=\"139\" src=\"https:\/\/puntodincontro.mx\/wp-content\/uploads\/2022\/08\/bannerenitemiliaromagnasapori.webp\" alt=\"\" class=\"wp-image-6946\" srcset=\"https:\/\/puntodincontro.mx\/wp-content\/uploads\/2022\/08\/bannerenitemiliaromagnasapori.webp 592w, https:\/\/puntodincontro.mx\/wp-content\/uploads\/2022\/08\/bannerenitemiliaromagnasapori-300x70.webp 300w, https:\/\/puntodincontro.mx\/wp-content\/uploads\/2022\/08\/bannerenitemiliaromagnasapori-16x4.webp 16w\" sizes=\"(max-width: 592px) 100vw, 592px\" \/><\/a><\/figure><\/div>\n\n\n<div style=\"height:12px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>El proyecto consisti\u00f3 en la reconstrucci\u00f3n de la estructura del techo del cuerpo central y de la corona circular alrededor de la secci\u00f3n columnada, seg\u00fan los criterios de la tradici\u00f3n local, reutilizando la estructura portante en vigas de madera y recuperando la capa de tejas de terracota visibles. Las paredes internas fueron revestidas con yeso y los pisos restaurados en barro.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"800\" height=\"805\" src=\"https:\/\/puntodincontro.mx\/wp-content\/uploads\/2022\/08\/percorsoespositivoparmigiano-sp.webp\" alt=\"\" class=\"wp-image-6939\" srcset=\"https:\/\/puntodincontro.mx\/wp-content\/uploads\/2022\/08\/percorsoespositivoparmigiano-sp.webp 800w, https:\/\/puntodincontro.mx\/wp-content\/uploads\/2022\/08\/percorsoespositivoparmigiano-sp-298x300.webp 298w, https:\/\/puntodincontro.mx\/wp-content\/uploads\/2022\/08\/percorsoespositivoparmigiano-sp-150x150.webp 150w, https:\/\/puntodincontro.mx\/wp-content\/uploads\/2022\/08\/percorsoespositivoparmigiano-sp-768x773.webp 768w, https:\/\/puntodincontro.mx\/wp-content\/uploads\/2022\/08\/percorsoespositivoparmigiano-sp-12x12.webp 12w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/figure><\/div>\n\n\n<p class=\"translation-block\">Las salas del antiguo sal\u00f3n de la leche, elevadas sobre la parte circular, albergan la instalaci\u00f3n de una exposici\u00f3n dedicada a la historia del Parmigiano Reggiano y a las tipolog\u00edas arquitect\u00f3nicas de los <em>Caselli<\/em>.<\/p>\n\n\n\n<p>En el centro del espacio circular se encuentra la antigua caldera de cobre para la elaboraci\u00f3n del queso, rodeada de diversas herramientas e instrumentos. Tambi\u00e9n hay un \u00e1rea para la producci\u00f3n de mantequilla y para la figura de San Lucio de Cavargna, quien probablemente vivi\u00f3 entre los siglos XII y XIII cerca de Como y ahora es venerado como el protector de los queseros.<\/p>\n\n\n\n<p>En la sala subterr\u00e1nea de la salmuera se relata la historia del queso Parmigiano, desde el siglo XII hasta nuestros d\u00edas, su cadena productiva y la historia del rallador. Tambi\u00e9n hay una exposici\u00f3n dedicada a las numerosas imitaciones del Parmigiano Reggiano existentes en el mundo, algunas de ellas tambi\u00e9n a la venta en M\u00e9xico.<\/p>\n\n\n\n<p>En las salas r\u00fasticas anexas al cuerpo principal del museo, tambi\u00e9n se exhibe una colecci\u00f3n de herramientas y objetos cotidianos de la civilizaci\u00f3n campesina relacionados con temas alimentarios. De lunes a viernes solo abre con reservaci\u00f3n previa y visita guiada. Desde el 9 de diciembre hasta finales de febrero las visitas solo se pueden realizar con reservaci\u00f3n previa para grupos.
